Who invented flour tortillas?
Flour tortillas originated in Mexico, but they were invented by the Spanish conquistadors who arrived there.
In 1542 the Spaniards introduced wheat cultivation to the state of Sonora, but they ran into a small problem.
Not finding the necessary ingredients to make bread, they started preparing zaruki. So what is this?
In simple terms, it was a mixture of wheat and water. Later, it became what we now know as flour tortillas.

According to El Heraldo de Chihuahua, the first written reference to flour tortillas dates back to 1769.
Explorer Miguel Constanzo wrote about this dish on Wednesday, November 15 of that year. That’s how ancient this delicious side is.
However, it wasn’t until 1960 that they became known in the state of Sonora, where corn dominated.
It is worth noting that each northern state of Mexico prepares them differently. The ones you eat in Coahuila will be different than those from Sinaloa.
What do you need to make flour tortillas?

One cup of hot water, 2 cups of wheat flour, a pinch of salt, a teaspoon of baking powder, and 3½ oz of lard.
To start, you have to mix the flour with a pinch of salt and baking powder. Then, make a volcano with the flour, with a hole in the center.
Put the lard into the hole and mix. Gradually, pour water until it creates a tortilla dough with enough consistency to form a soft ball.

You have to let the ball rest for a few minutes and then make smaller balls.
These ‘testales,’ as they are called, should be rolled out with a rolling pin to create a sheet. The thickness is a matter of taste.
